Savory French Toast with Smoky BBQ Mustard Hollandaise


So, after taking in a fantastic Silversun Pickups/MUSE concert on Saturday, I decided to make something especially tasty for Sunday brunch. It’s definitely not a breakfast for the calorie conscious, but it is a really tasty variation on traditional french toast. Prepared with sourdough bread, topped with bacon and a single fried egg, and then smothered with smoky BBQ mustard hollandaise, this french toast is nothing like the syrupy sweet french toast most people grow up eating.

Savory French Toast with BBQ Mustard Hollandaise
Serves 4
You will need…

For the batter/toast:

1 round loaf crusty sourdough bread
4 eggs
4 tablespoons milk
2 cloves of garlic, crushed
1/4 teaspoon salt
1/4 teaspoon pepper
1 1/2 tablespoons fresh or freeze-dried dill
2 tablespoons smoked paprika
1/2 teaspoon cayenne pepper
1/2 teaspoon onion powder

To top the french toast:

4 eggs
6 strips of thick cut, pepper rubbed bacon
about 1/2 stick of butter (you won’t need all of it, just enough to fry up the toast and the eggs)
3 tablespoons of Smoky BBQ Mustard (I like the one made by Hannaford Inspirations) OR 1 1/2 tablespoons each of your favorite mustard and BBQ sauce
Hollandaise sauce (either made from scratch or from a prepared mix)
Fresh dill (to taste)


1. The night before, slice the ends off of the sourdough boule, and then slice the loaf into four thick slices (about 3/4 inch thick). Set aside.

2. In a 13 x 9 glass baking dish, whisk together the batter ingredients. Coat both sides of each piece of bread, and then place all four slices in the baking dish. Cover with saran wrap and refrigerate overnight.

3. The next morning, cut each strip of bacon in half. Fry up the bacon in your largest non-stick frying pan, making sure to keep the heat on medium to keep the bacon fat from smoking or burning.

4. Set aside the bacon on paper towels, reserving the bacon grease in the pan.

5. Add a couple of pats of butter to the pan, and turn up the heat to medium high. When the butter begins to foam, place the slices of french toast in the pan. Cook 5-8 minutes, or until dark golden brown. Flip, add more butter if needed, brown the other side, and place the french toast on a foil-lined baking sheet.

6. Adding a pat of butter if necessary, reduce the heat to medium and fry four eggs in the same pan. The eggs will become speckled with pepper and bacon bits from the pan.

7. Top each slice of french toast with three half-slices of bacon and a single fried egg. Place under the broiler for 1-3 minutes, making sure not to let anything burn.

8. In another pan, build your hollandaise sauce. When complete, slowly whisk in the smoky BBQ mustard.

9. Remove each topped toast to a warm plate, smother with smoky BBQ mustard hollandaise, and sprinkle with fresh dill.
