Traditional Egyptian Breakfast


I’m on a Bourdain breakfast kick, constantly hunting down breakfast foods I’ve seen him eat on his show. A traditional breakfast for many Egyptians is Fooll, also spelled Ful. It is made with fava beans and spices, and can be augmented with chopped hard boiled eggs, unleavened bread, hummus, or other foods. Originally, it was cooked in sealed clay vessels that were buried under hot coals. In search of a cooking technique that was more suited to my kitchen, I stumbled across this recipe. Haven’t had a chance to try it out yet. Let me know if it worked out for you!
